Archaeologists have discovered Stone Age paintings as old as 8,000 years in which honey is illustrated as a treatment for disease. Other ancient artifacts from civilizations including Sumerians, the Egyptians, and the Greeks verify that honey's therapeutic and nutritional value has been widely known for time immemorial.

However, pasteurization, which is the process of bringing a liquid to its boiling point so as to inactivate potentially harmful microorganisms, wasn't invented until 1864. So, the honey that most of us have grown up with is very different from the honey of the old world. That kind of honey, also known as raw honey, is taken directly from the hive, is unfiltered and unprocessed, and is free of preservatives and sweeteners. Many believe that raw honey contains a higher nutritional value consisting of antioxidants, natural enzymes, and amino acids. While further studies are needed to confirm the full extent of raw honey's efficacy, some small studies confirm the validity of at least some of the claims made by raw honey's adherents, including the fact that it has potent anti-septic properties.
