Unlike truffle oils, which don't really have the chemical ability to extract flavor from the fungus, honey can realistically separate the aroma and taste from the natural product, and thanks to its antibacterial properties even acts as a natural preservative and keeps everything relatively fresh. If you're going for a perfectly smooth texture, try the Urbani or Caviar Line; the former doesn't have any specks of material, fungal or otherwise, yet still has a pungent flavor, while the latter has a single large slice of truffle suspended in the jar. Clear on the opposite end of the spectrum, the Truffles USA option is packed with about 3 times as much of the actual tuber as what most other brands claim, plus, it doesn't list any artificial aromas or "natural flavor" on its label, which is an excellent sign. Maison Pebeyre makes a line of delicious and exotic additives, and their honey is just as popular as the rest, if not more so. We also included a truffle syrup, because while that is somewhat unconventional, it can lend a very interesting profile to the right sausage, and even makes a worthwhile addition to some desserts -- in fact, I dare you to drizzle a little bit over some vanilla bean ice cream.
