We added the Tuo Black Hawk S, a sleek and popular option that's sharpened and hardened by time-tested traditional methods and which comes in a high-end carrying case to boot. We also decided to include the Mercer Culinary Ultimate, which has textured finger points on its handle so that your hand is less likely to slip, an especially important consideration given this model's razor-sharp blade.
While the curved, flexible version of the Victorinox Fibrox Pro faces some availability issues, all four other models are still available and so high-quality that we've decided to keep it on the list.
