Central Milling Organic Offered in 5 and 50-pound bags, this option from Central Milling is less bitter than many varieties on the market. It's a blend of both whole and hulled buckwheat that results in a flour that is a little lighter in color and less bitter while still maintaining its iconic assertive flavor. It's 100% organic, kosher, non-GMO, and processed in an AIB Superior and SQF Certified mill. centralmilling.com
Editor's Notes
June 16, 2020:
Buckwheat belongs to a group called pseudocereals and is not related to wheat, which means it's naturally free of gluten. That makes it an excellent alternative for baking if you have an intolerance, however, it's important to note that many options on the market are not always processed in a mill that only ever touches buckwheat, as selections like Bouchard Family Farms Kosher does.
Oftentimes these flours pass through facilities that also process tree nuts, dairy, eggs, and wheat, like Bob's Red Mill Non-GMO, Food to Live Stone Ground, and Haldeman Mills Naturally. So be sure to carefully scrutinize where your choice comes from to ensure no cross-contamination interferes with your diet.
If you're not adhering to any specific eating plan but are simply interested in buckwheat's pronounced nutty flavor, then Great River Milling Specialty, Arrowhead Mills Organic, and Food to Live Stone Ground are all solid choices. For a milder option, opt for Treblec Farine De Sarrasin or Anthony's Goods. These finely-ground choices are also great candidates for blending with almond flour, potato starch, or arrowroot powder.
Today we said goodbye to Hodgson Mill and Golden Farms Milling, which became unavailable, and took the opportunity to recommend Ployes French Acadian Mix and Tristan Aliments Foods Baking in their wake. The former is a blend of multiple flours and other ingredients to make easy pancakes, flatbreads, wraps, and other tasty breakfast foods, while the latter is an excellent budget-friendly option that's relatively mild in taste and finely textured, perfect for beginners to practice with.
