Cassava flour is considered by many to be the holy grail of grain, gluten, and nut-free cooking. It's also vegan, vegetarian, and paleo, adding to its versatility. Like tapioca flour, it comes from the cassava root, a starchy tuber high in carbohydrates, so it's not an ideal substitute to use in every meal if you're on a diet or cutting carbs.
It's very similar to all-purpose flour and can be ground to have an extremely smooth texture that can be substituted on a 1:1 basis with it, with a neutral flavor that lends it well to desserts, savory dishes, and as a thickener for stews. If you don't have allergies to nuts, it mixes well with almond flour and coconut flour when you want to experiment with textures and densities. And while it does have naturally occurring cyanide compounds when in tuber form, it's only toxic when eaten raw and unprocessed.
