Throughout Europe and the Americas, smoking food has been a means of preservation for thousands of years, with techniques and processes being passed down through generations. Nowadays it's more about adding flavor and tenderizing, and with modern food smoking technology readily available it is gaining popularity, however, buying a dedicated smoker can be costly. With these smoker boxes, you can add that smoky flavor using just your regular barbecue or gas grill. Choosing the best smoker depends on several factors, namely, the type of barbeque you own, the food you want to cook, and the fuel you will use. Wood chips are the most common choice, as they are available in a variety of flavors, such as apple, hickory, and mesquite, and are best used for red meat. Wood pellets are a good alternative as they burn for longer, meaning fewer refills. Some food needs to be cold smoked, such as fish and sausages, and in this case, sawdust is the best choice as it doesn't generate much heat.

If you use a charcoal barbecue you can place the smoker box directly on the coals to get the heat going straight away. The Outset Q177 is made from cast iron and is the most durable option in this ranking and will not warp. The Grill Gods Grilling Set and the Broil King 60190 are also heavy-duty and are made from thick-gauge stainless steel, the latter of which has two chambers so liquid can also be added to increase moisture. The Tizze Smoker Tube is especially good for use with pellets as it is made from a finely perforated mesh, and can produce smoke for around four hours per refill. If you're looking for a truly portable option, then the Steven Raichlen Smoke Pucks are only three inches in diameter and can be placed directly next to the food to concentrate the smoke on one area, and can be used with both chips and pellets. For cold smoking, most designs seem to be very similar and are notable since they don't have a lid. The one we picked out is the Hairy Cold Smoke Generator.
