For general purpose cutting in metal, wood, and plastic, you'll want to choose a set of bi-metal cutters like the Diablo DHS009SPC and the DeWalt D180005. Bi-metal hole saws are made with highspeed steel to retain edge hardness and milder steel to increase its ability to take punishment. The Diablo has also been tipped with carbide so it should be able to power through thin (18 gauge) mild steel plate although they're mostly designed for cutting wood and plastic.

If your intent is to cut high gauge steel, you should be using dedicated steel hole saws like the Greenlee 660 and the Klein Tools 31872. If you do, you should always be using a cutting fluid. These act as both a lubricant and a coolant. The lubricating properties of cutting fluid prevent tip welding and reduce the wear on hole saws and drills while its cooling properties prevent excessive heat from deforming the workpiece and possibly ruining the tempering if present.

Hole saws can be very dangerous and should only be used while wearing adequate safety equipment.
